Creole slaw and Pacific West’s Southern fried barra burger creates an authentic ‘Southern style’ fish burger ideal for pubs and hotels.
The Creole slaw creates an instant heat hit while the Barramundi coated with Southern herbs and spices gives this burger true ‘Southern’ status. Scale the slaw prior to service and refrigerate. Serve with pickles, salad and potato wedges. Great as a takeaway or dine in option and would also work nicely on a Specials Board.
INGREDIENTS
- Pacific West Southern Fried Barramundi Burger
- 1 1/2 cups mayonnaise
- 1 lemon, juiced
- 1 red chilli, sliced
- 1 red onion, thinly sliced
- 1 tablespoon cider vinegar
- 1/2 head red cabbage, shredded
- 1/2 yellow capsicum, sliced
- 1/4 cup Creole mustard
- celery seeds
- dash of tabasco
- juice of 1 lemon
- Kosher salt and freshly ground black pepper
- Pinch sugar
- Sourdough Burger Buns, lightly toasted
- tomatoes, quartered
INSTRUCTIONS
For the southern fried burger
Deep fry 180C 4-5 minutes
For the spicy slaw
Combine the cabbage, tomatoes, red onion, yellow pepper and chilli in a large bowl. In another bowl, mix the mayonnaise, mustard, vinegar, lemon juice, and sugar. Stir to incorporate. Pour the dressing over the cabbage mixture and toss gently to mix. Season the slaw with celery seed, hot sauce, salt, and pepper. Chill for 2 hours in refrigerator before serving.
