Amazing Miso Mussels
Mussels offer venues a labour light and exciting menu addition with very little kitchen stress. This miso mussels recipe is a quick, easy, healthy way to use mussels in a new, Asian-inspired way. Ideal for most venues, even larger cafes!
Tip for grit free mussels: Transfer the mussels to a bowl of salted iced water. Scatter a handful of oats over the top of the water and set aside for 45 minutes’ the mussels feed off the oats and, in feeding, expel any sand trapped inside their shells.

For our miso mussels we use Omega mussels from New Zealand. These are exclusively available in Australia through Pacific West. Suspended on ropes, these mussels feed naturally and are sustainably farmed in the pristine waters of the top of New Zealand’s South Island.

- 1 litre vegetable stock
- 1 tbsp ginger grated to make
- 1kg Omega Mussels
- 4 tbsp miso soup paste
- a bunch spring onions, sliced
- steamed rice to serve
For the miso mussels
Heat the vegetable stock in a large saucepan, and add the ginger, miso paste and half the spring onions. Bring to a simmer, then add the mussels. Put on the lid, and cook for 4-5 minutes until the mussels are open. Scatter with the remaining spring onion and serve with rice if you like.
