Squid Rings with a Rice Noodle Salad

Panko squid rings, a great rice noodle salad with a simple Ponzu sauce makes for an interesting and highly profitable menu addition. Great as a lunch or dinner option, this dish will be popular for healthy eaters and the curious. All the elements can be made a few hours in advance, and the onion / ginger can be made days prior and kept refrigerated ready for use. Other seafood options that will work with this dish include: crumbed or tempura scallops; panko or tempura prawns and tempura squid rings.

 

INGREDIENTS

  • Pacific West Panko Squid Rings
  • 60 mls cider vinegar
  • 30 gm caster sugar
  • 1 small red onion finely diced
  • 6 cm ginger peeled and julienned
  • 150 gm flat rice noodles - broken into approx 15 cm pieces
  • 1 granny smith apple sliced into 2 mm thick wedges
  • 1 large cucumber - Lebanese - halved - seeds and pulp removed cut into long thin strips
  • 2 red chillies deseeded and julienned
  • 20 gm mint leaves roughly chopped
  • 15 gm tarragon leaves only - roughly chopped
  • 1 tbs poppy seeds
  • 1/4 cup soy sauce - Ponzu Sauce
  • 2 tbs lemon juice - Ponzu Sauce
  • 2 tbs lime juice - Ponzu Sauce
  • 2 tbs mirin - Ponzu Sauce
  • 2 tsp rice vinegar - Ponzu Sauce

INSTRUCTIONS

For the panko squid rings

Deep fry 180C 2-3 minutes

For the Ponzu sauce
Combine all the ingredients in a sterilized mason jar and mix well. Steep in the refrigerator overnight (minimum), for several days, or for up to a week. Note katsuobushi and kombu are often used as key ingredients in Ponzu sauce. Our recipe is a simple version.
For the rice noodle salad

1. Whisk vinegar and sugar in a bowl. Add onion and ginger. Stir to coat. Leave 30 mins to soften.

2. Place noodles in a large bowl covered in boiling water – set aside for 15 minutes. Until noodles are soft. Drain. Mix with 1 tbs oil and set aside in a large bowl to cool down.

3. Add rest of ingredients to noodles plus the pickled onion ginger and juices , remaining 2 tbs oil and 1 tsp salt. Mix together well and serve.
