Salt + Pepper Squid with Chilli Sauce

Pacwest Products:

Cook Time: 15 minutes

This Salt and Pepper Squid dish makes a great Blackboard Special, shared plate or entree. Serve the squid on top of the mango slaw with the sauce on the side. We create an epic spicy sweet chilli sauce to go with our Salt and Pepper Squid. Chilli sauce may be hot or sweet or a combination of both which is the case with the sauce we have made. If you love your heat, spice things up with a little extra chilli! Ideal for pubs, hotels and bistros.

INGREDIENTS

  • 1 cup rice wine vinegar
  • 1 cup sugar
  • 1 cup water
  • 1 jalapeno chilli, thinly sliced
  • 1 small red onion finely sliced
  • 1 tsp garlic, minced
  • 2 tsp chilli, minced
  • 2 tsp cornstarch
  • 2 tsp fresh ginger, minced
  • 2 tsp good quality tomato sauce
  • coriander
  • lettuce leaves torn
  • lime juice
  • mango
  • orange juice
  • orange zest
  • Pacific West Salt & Pepper Squid

INSTRUCTIONS

For the Salt and Pepper Squid

Deep fry at 180C for 3-4 minutes

For the spicy sweet chilli sauce.

Pour water and vinegar into a saucepan, and bring to a boil over high heat. Stir in sugar, ginger, garlic, chilli, and tomato sauce.

Simmer for 5 minutes. Stir in cornstarch. Remove saucepan from heat to cool. Transfer to a bowl, cover, and refrigerate until required.

For the mango slaw.

Combine all ingredients gently in a bowl
