Samosas with a Spiced Tomato Jam

A spiced tomato jam is a great condiment for our cocktail samosas. The tomato jam can be scaled and kept refrigerated for up to five days. This pairing is ideal as a bar snack for hungry sports fans. The spiced tomato jam will also go nicely with Pacific West’s spring rolls, prawn cones and our calamari range. Ideal for pubs, clubs and hotels.
INGREDIENTS
- Pacific West Cocktail Samosas
- 2 tsp brown mustard seeds
- ⅛ tsp ground cardamom
- 250 gms yellow cherry tomatoes, halved
- 250 gms red cherry tomatoes, halved
- 220 gm white sugar
- ½ tsp ginger
- ½ tsp chilli powder
- 2-3 tbs lemon juice
INSTRUCTIONS
For the Pacific West prawn cocktail samosas
Deep fry 180C 3-4 minutes
For the spiced tomato jam
Place a saucepan over medium- low heat. Add the mustard seeds and cardamom and toast till fragrant and the seeds begin to pop. Remove from the heat and let cool.
Place the cherry tomatoes, chilli powder, lemon juice, ginger, toasted mustard seeds, toasted cardamon seeds and sugar in a bowl over medium-high heat and bring to the boil, stirring constantly to prevent the mixture from burning. Once the mixture comes to the boil, reduce the heat to medium and simmer for 20-30 minutes until the jam is glossy and thickened. Remove from the heat and pour into a sterilised jar.
