Squid Pieces with a Tomato and Chilli Jam
Premium squid pieces are fabulous dipped into spicy tomato and chilli jam. A great way to promote your seafood menu options is to up the excitement level with house made condiments. Our tomato and chilli jam with lightly dusted squid pieces makes an ideal takeaway or dine in menu option. Starter, shared plate or a ‘specials’ option – this dish is sure to please your most fussy patrons. Great for pubs, clubs, bistros and hotels.
We use Pacific West’s lightly dusted squid. Hand cut squid pieces lightly crumbed in a soft bread crumb. The variety of cuts and shapes gives this product a house made appearance.

Pacific West’s lightly dusted squid pieces
- 1 3/4 cup caster sugar
- 1 kg ripe tomatoes, coarsely chopped
- 1 tbs fish sauce
- 1 tsp maldon salt
- 1/3 cup white wine vinegar
- 2 tsp finely grated ginger
- 3 cloves garlic, sliced thinly
- 5 fresh long red chillies, sliced thinly
- Juice of 1 large lemon,
- Pacific West lightly dusted squid pieces
For the tomato chilli jam
Place all of the ingredients in a large saucepan over high heat, stir without boiling until sugar has dissolved. Bring to the boil and then reduce heat, simmer, uncovered, stirring occasionally for about 90 minutes or until jam is thick.
Cool for 15 minutes. Blend this jam for a smoother consistency if you wish. Store in sterilized jars, refrigerate. Will keep for up to 60 days.
