Mussels with Wheat Beer and Bacon

A great pub dish! Mussels in wheat beer and bacon is an ideal Summer addition to menus. Wheat beer is used instead of white wine and bacon gives the dish a real smoky flavour. Serve with crusty bread as a starter or as a main meal. Cook and serve in under 10 minutes. This dish will be a favourite with patrons all Summer long. Serve with cold lager beer or a crisp white wine.

For our mussels in wheat beer we use New Zealand farmed Green shell mussels, Sustainable A+ certified. These are exclusively available in Australia through Pacific West.

Sensational Sake Steamed Mussels

Sake Steamed Mussels

Sake steamed mussels are a great addition to seafood menus! Adding sake to cooking serves the dual purpose of tenderising and intensifying the food's flavour. In our sake steamed mussels dish, the addition of good quality pure rice sake allows the umami-rich flavour of the mussels, as well as the unique flavour of the various herbs and spices used, to shine through. With little labour required it makes sense to include them this Summer. Cook and serve in under 10 minutes. Serve with cold lager beer or a crisp white wine.

Note: Tamari isa Japanese soy sauce made by fermenting soybeans and usually gluten-free. Compared with most soy sauces, it's darker, less salty, and has a strong umami flavour.

Tip for grit free mussels: Transfer the mussels to a bowl of salted iced water. Scatter a handful of oats over the top of the water and set aside for 45 minutes' the mussels feed off the oats and, in feeding, expel any sand trapped inside their shells.

A great takeaway or lunch menu option! Our crab cakes with roasted tomatillo mayo is a signature dish from Jack Fry's, a legendary diner in Louisville Kentucky. The tomatillo mayo can be used using canned tomatillos, or if you prefer use green tomatoes with a few squeezes of fresh lime juice. Piment d'Espelette can be found in powdered or paste form at specialty food stores. If necessary, hot paprika can be used as a substitute. A great menu addition for pubs, bistros and hotels.
