Tacos with Tempura Prawns & Mango Salad

Tempura prawn tacos with mango, lime & cumin yoghurt are a great Summer addition to menus. Increase the heat factor by increasing the number of chillies. Scale the salad and cumin yoghurt and keep refrigerated ready for use. As pictured, serve the elements on a serving board or construct as a great takeaway option.
INGREDIENTS
- Pacific West Tempura Prawns
- 1 tsp cumin seeds. Toasted and finely crushed
- 3 limes, lime zest and limes cut into wedges
- 20 gm coriander leaves, finely chopped
- 120 gm of Greek style yoghurt
- ½ red onion finely sliced
- ½ firm mango peeled and julienned
- 1 red chilli deseeded and julienned
- 12 corn or flour tortillas
- 3 tbs vegetable oil
INSTRUCTIONS
For the tempura prawns
Deep fry 180C 2-3 minutes
For the tacos with mango, lime & cumin yoghurt
Put yogurt, cumin seeds and some lime zest in a bowl – mix together. Set aside.
In a separate bowl combine onion, mango and chilli. Set aside.
On a warm tortilla place one tempura prawn then place yoghurt mixture on tortilla with mango salad on top.
Alternatively, serve the elements of the dish separately and let your patrons construct their own tacos as pictured.
