Tempura prawns with broccoli, soy sauce, garlic & peanuts is a labour light menu addition that looks fantastic on the plate. Substitute broccoli with a variety of Asian greens if you prefer. Alternatively consider other prawn or scallop options as the protein sauce. This dish is suitable as a lunch or dinner option and will work nicely in pubs, hotels, clubs and bistros. We use Pacific West’s tempura prawns.
INGREDIENTS
- Pacific West Tempura Prawns
- 3 tbs peanut oil
- 3 garlic cloves, finely sliced
- 3cm piece fresh ginger, peeled and julienned
- 1 orange, 3 strips of finely shaved skin
- 1⁄4 cup salted, roasted peanuts, roughly chopped
- 600gm broccolini, trimmed and cut in half width ways if stems are thick
- 2 tbs light soy sauce
- 1 1⁄2 tsp honey
- salt
INSTRUCTIONS
For the tempura prawns
Deep fry 180C 2-3 minutes
For the broccoli with soy sauce, garlic and peanuts
Heat the oil in a small saucepan and add the garlic, ginger, orange skin and peanuts; stir fry for 3 minutes, until light golden brown, then transfer to a small bowl, along with all of the oil. Steam the broccolini over boiling water for a minute or so, then remove from the heat and blanche in cold water and transfer to a serving plate. Return the small saucepan to the heat and add the soy sauce and honey, along with a pinch of salt; heat for 1 minute (it should thicken to about one and a half tablespoons of sauce). Spoon the peanuts and aromatics over the broccolini. Serve the tempura prawns over the vegetables.
