Tempura Prawns with Chilled Udon Noodles

Tempura prawns with chilled sesame Udon noodles & vegetables is a stunning meal that can be made with a minimum of fuss. Scale and store the dressing prior to service.  Fresh shiitake mushrooms can be replaced with dried mushrooms ( refreshed ) if unavailable. The choice of vegetables is up to you, here we use baby bok choy and bell pepper. This dish is ideal as a dine in option but would also work nicely as a takeaway.

Our tempura prawns with chilled sesame Udon noodles & vegetables will make a great addition to lunch menus or a light main meal option. Best suited for pubs, larger cafes, hotels and clubs.

INGREDIENTS

  • Pacific West Tempura Prawns
  • 200 gms fresh udon noodles
  • Salt + Black pepper
  • Avocado oil
  • 200 gms shiitake mushrooms, sliced thinly
  • 3 tablespoons neutral oil, divided
  • 1 medium-large baby bok choy, thinly sliced
  • 1 red bell pepper, cored and seeded, and thinly sliced
  • Spring onion, sliced, for garnish
  • Sesame seeds, for garnish
  • 6 cloves garlic, pressed through garlic press - garlic-sesame dressing
  • 3 tablespoons soy sauce - garlic-sesame dressing
  • 2 tablespoons rice vinegar - garlic-sesame dressing
  • 2 tablespoons honey - garlic-sesame dressing
  • 1 ½ tablespoons chilli-garlic sauce - garlic-sesame dressing
  • 1 tablespoon sesame seeds - garlic-sesame dressing
  • 1 tablespoon sesame oil - garlic-sesame dressing
  • 1 tablespoon avocado (or other) oil - garlic-sesame dressing
  • 1 teaspoon grated ginger - garlic-sesame dressing
  • 1 teaspoon chilli oil (optional) - garlic-sesame dressing

INSTRUCTIONS

For the tempura prawns 

Deep fry 180C 2-3 minutes

For the chilled sesame Udon noodles & vegetables

Place a medium-large pot of water over high heat, add in a few pinches of salt, and bring to a rapid boil; once boiling, add in the fresh udon noodles, and using chopsticks or the handle of your spoon, gently move them around to separate them, and cook for no longer than 3 minutes; drain and rinse under cold water thoroughly until the noodles are chilled.

Place a large pan over high heat, and drizzle in a bit of the oil; once hot, add in the sliced mushrooms, along with a pinch of salt and pepper, and saute for a few minutes until softened and golden-brown; then, add in the garlic and stir to combine, sauteing just until aromatic; spoon onto a plate to cool for a few moments.

Add the chilled noodles to a large bowl, and toss with the dressing; then, add in the sliced baby bok choy, red bell pepper, and cooled sautéed mushrooms. Toss gently to combine.

Divide evenly among bowls, and garnish the tops with some green onions and a sprinkle of sesame seeds; serve cold.

Pinch red pepper flakes (optional)
