Hand Crumbed Flathead w/ Crunchy Pickle Salad

Pacwest Products: Hand Crumbed Flathead Fillets
Prep Time: 5 minutes
Cook Time: 15 minutes

A pickle salad that pairs nicely with a premium hand crumbed flathead fillet. Plenty of different textures going on in the salad between the crisp onions, pickles, and crunchy nuts. Be sure to use pickles that are bright with acid and low on sugar. Components of the salad can be made prior to service and assembled while the crumbed flathead is frying. This dish combines to make an impressive fish main meal that suits pubs, hotels and clubs.

In our hand crumbed flathead w/ crunchy pickle we use Pacific West’s Hand Crumbed Flathead Fillets. Wild caught Flathead fillets hand coated with fresh panko crumb. Skinless and deboned with an upmarket presentation.

 

INGREDIENTS

  • 1 medium fennel bulb, tough outer layers removed, thinly sliced crosswise
  • 1 tsp honey
  • ½ cup chopped dill
  • ½ cup walnuts
  • ½ small white onion, thinly sliced, rinsed
  • ¼ tsp. crushed red pepper flakes
  • 2 tsp. Dijon mustard
  • 3 Tbsp. red wine vinegar
  • 4 whole pickles (half- or full-sour), halved lengthwise, sliced crosswise into 3cm pieces.
  • 60 gm Parmesan, shaved
  • extra virgin olive oil, for drizzling
  • Kosher salt, freshly ground pepper

INSTRUCTIONS

For the crunchy pickle salad

Preheat oven to 180oC. Toast walnuts on a rimmed baking sheet, tossing once, until golden brown, 810 minutes. Let cool, coarsely chop. Meanwhile, whisk pickle brine, vinegar, mustard, honey, and red pepper flakes in a large bowl. Add onion and season with salt and pepper. Let sit to allow onion to soften slightly, at least 5 minutes and up to 15 minutes. Add walnuts, pickles, fennel, dill, and Parmesan to dressing and toss to coat. Transfer salad to a large shallow bowl or platter and drizzle with oil. Serve with Pacific West’s crumbed fathead fillets and house made chips (optional)

For the hand crumbed flathead fillets

Deep Fry from frozen at 180C for 5-6 minutes.
