Crumbed Squid Rings w/ Tomato and Onion Salad

Pacwest Products: Crumbed Squid Rings (natural/formed)
Prep Time: 5 minutes
Cook Time: 5 minutes

A tomato and onion salad pairs nicely with Pacific West’s crumbed squid rings. This is a labour light menu addition ideal for lunch. Use extra ripe truss tomatoes where possible.  Serve with a side of chips or potato as an optional suggestion. A great addition to lunch menus and best suited for pubs and hotels

INGREDIENTS

  • Pacific West Crumbed Squid Rings
  • 6 ripe tomatoes, thinly sliced
  • 2 red onions, thinly sliced
  • 60 ml (2 fl oz/¼ cup) extra virgin olive oil
  • 60 ml apple cider vinegar
  • 1 tsp sea salt
  • 1 tsp caster sugar
  • 1 tsp dried oregano

INSTRUCTIONS

For the crumbed squid rings

Deep Fry 180C 2-3 minutes

For the tomato and onion salad

Arrange the tomato and onion decoratively on a serving plate. Combine the olive oil, vinegar, caster sugar and salt in a bowl or jug and pour over the tomato and onion just before serving, or add the dressing and set aside at room temperature for about 1 hour for the flavours to develop.. Sprinkle over the oregano and serve.

Squid rings cut from natural or formed squid. Once cooked, these squid rings offer a quality golden, crispy crumb. This is advantageous for hotels, pubs & clubs and function centres looking to serve a delicious prodouct which will minimise wastage and reduce labour costs.
