A tomato and onion salad pairs nicely with Pacific West’s crumbed squid rings. This is a labour light menu addition ideal for lunch. Use extra ripe truss tomatoes where possible. Serve with a side of chips or potato as an optional suggestion. A great addition to lunch menus and best suited for pubs and hotels
INGREDIENTS
- Pacific West Crumbed Squid Rings
- 6 ripe tomatoes, thinly sliced
- 2 red onions, thinly sliced
- 60 ml (2 fl oz/¼ cup) extra virgin olive oil
- 60 ml apple cider vinegar
- 1 tsp sea salt
- 1 tsp caster sugar
- 1 tsp dried oregano
INSTRUCTIONS
For the crumbed squid rings
Deep Fry 180C 2-3 minutes
For the tomato and onion salad
Arrange the tomato and onion decoratively on a serving plate. Combine the olive oil, vinegar, caster sugar and salt in a bowl or jug and pour over the tomato and onion just before serving, or add the dressing and set aside at room temperature for about 1 hour for the flavours to develop.. Sprinkle over the oregano and serve.
