INGREDIENTS
- 2 egg yolks
- 2 good pinches sea salt flakes
- 75ml extra virgin olive oil
- 75ml sunflower oil
- Finely grated zest of 2 lemons

INSTRUCTIONS
For the lemon mayonnaise
Combine the oils in a jug with a lip. In a bowl, combine the eggs using a balloon whisk. Add oil drop by drop to the eggs, whisking constantly until the mixture develops into a thin cream. The remainder of the oil can now be added in a thin, steady stream, whisking constantly until the mayonnaise is thick and glossy.
For the prawn cutlets
Deep fry 180c 3-4 minutes
