Tempura Prawns w/ Pears, Radishes, Gorgonzola & Nori

Pacwest Products: Tempura Prawns
Prep Time: 10 minutes
Cook Time: 5 minutes

A labour light but spectacular salad that goes nicely with Pacific West’s tempura prawns. Pears, radishes, creamy cheese and crunchy seaweed with a little zing deliver a salad with a difference!  The dish can be made to order in about ten minutes and is sure to add interest menus.

This dish best suits busy pubs, hotels, bistros and larger cafes.

 

INGREDIENTS

  • Pacific West Tempura Prawns
  • 1 toasted nori sheet
  • ¼ cup extra-virgin olive oil
  • 100 gms Gorgonzola dolce or other soft blue cheese
  • 2 medium radishes
  • 3 ripe but firm pears (such as Bosc or small Asian)
  • 3 Tbsp. fresh lemon juice
  • flaky sea salt
  • Freshly ground black pepper
  • kosher salt

INSTRUCTIONS

For the tempura prawns

Deep fry 180C 2-3 minutes

For the pears and radish salad

Thinly slice pears, starting from outside edge and cutting until you hit seeds and working your way around core. Thinly slice radishes. Combine pears and radishes in a large bowl, season with kosher salt. Add oil and lemon juice and toss to coat. Taste and season with more kosher salt if needed. Arrange some salad on each plate, dividing evenly, and sprinkle lightly with sea salt. Crumble Gorgonzola on top and season with pepper. Crush nori and sprinkle some over each salad.
