Southern Style Fish Burger and Fries

Pacwest Products: Southern Fried Barra Burger
Prep Time: 10 minutes
Cook Time: 40 minutes

Our Southern Style Fish Burger is the real McCoy! The herb tartare sauce and coleslaw should be made prior to service and kept refrigerated ready for use – besides saving time they will taste better if left to stand. We use Pacific West’s Southern Fried Barramundi Burger. It has been fully prepared for you with a southern herb and spice mix. With the southern fries made and kept warm, this dish can be cooked, plated and served in under 10 minutes! Ideal for venues that want to serve exciting burger options.

About Pacific West’s Southern Fried Barramundi Burger: A natural Barramundi fillet with a coating of original Southern herbs and spices. This crunchy, out of the fryer fish fillet is fully prepped for you and will give your fish burger a new twist your patrons will love.

INGREDIENTS

  • 1 cup mayonnaise
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon lemon juice
  • 1/2 teaspoon celery salt
  • 1/2 tsp onion powder - southern fries
  • 1/2 tsp salt - southern fries
  • 1/3 cup mayonnaise
  • 1/4 cup buttermilk
  • 1/4 teaspoon ground black pepper
  • 1/4 tsp ground coriander - southern fries
  • 2 tablespoons dill pickle relish
  • 2 tablespoons freshly squeezed lemon juice
  • 2 tablespoons parsley, chopped
  • 2 tsp paprika - southern fries
  • 3 tablespoons chives, chopped
  • 3 tablespoons white sugar
  • 3/4 tsp garlic powder - southern fries
  • 4 white baking potatoes - southern fries
  • Best burger buns
  • coleslaw salad mix
  • Pacific West Southern Fried Barramundi Burger
  • pinch black pepper - southern fries

INSTRUCTIONS

For the southern fries

Preheat the oven to 220C and line two large baking trays with grease-proof paper. Peel and chop the potatoes into fries 1-1.5 cm thick. Add to a saucepan of water, boil for 12 minutes and then drain fully. Shake in the pan to make the potatoes slightly fluffy. Meanwhile mix together the spices for the fries and then coat the drained potatoes in the seasoning. Spread out on a baking tray and bake for 40 mins, turning the potatoes half way through.

For the southern fried burger

Deep fry 180C 4-5 minutes

For the coleslaw

Mix together the mayonnaise, buttermilk, celery salt, pepper, sugar, vinegar, and lemon juice in a large bowl. Add the shredded cabbage and carrots and gently toss until evenly coated. Refrigerate until ready to serve, at least 3 hours.

For the herb tartar sauce

Mix together all of the ingredients and refrigerate until needed, at least 1 hour
