INGREDIENTS
- 1 cup mayonnaise - tartare sauce
- 1 garlic clove, finely grated - tartare sauce
- 1 small shallot, finely chopped
- 1 tbs capers
- 1 tbs chives finely chopped
- 1 tbs fresh horseradish, finely grated
- 1 tbs parsley finely chopped
- 1 tbs pickles
- 1 tsp Dijon mustard
- 1 tsp lemon juice
- 1 tsp whole grain mustard
- 1/2 cup good chilli sauce
- 1/2 tbs parsley
- 1/4 cup good quality tomato sauce
- 1/4 tsp Tabasco sauce
- 1/4 tsp Worcestershire sauce
- 1tbs tomato paste
- Pacific West Tempura Prawns
- Pinch of ground white pepper
- squeeze lemon juice
INSTRUCTIONS
For the cocktail sauce
Put the tomato sauce, tomato paste, chilli sauce, horseradish, lemon juice, Worcestershire, Tabasco, and pepper into a mixing bowl. Whisk well. Cover and chill for at least 1 hour before serving. It will keep for 5 days in the refrigerator.
For the tartare sauce
Whisk shallot, garlic, mayonnaise, capers, pickles, chives, parsley, lemon juice, Dijon mustard, and whole grain mustard in a small bowl until combined. Season with salt and pepper. Cover, refrigerate for up to 5 days.
For the tempura prawns
Deep fry 180C 2-3 minutes
